Pursuing a degree in sports, exercise and health science with the aim of becoming a secondary school teacher is a promising pathway. Teaching is regularly listed on Australia’s Skilled Occupation List, particularly in fields such as science, health, and physical education.
To be eligible for visa sponsorship in the future, here are some steps to consider:

Complete your degree and then undertake a postgraduate teaching qualification such as a Graduate Diploma in Education or a PGCE equivalent.

Gain registration and experience as a qualified teacher, as both are usually required for skills assessments.

Once qualified, you may become eligible for skilled visas such as the Skilled Independent (Subclass 189), Skilled Nominated (190), or Skilled Work Regional (491).
New Zealand also has clear teacher pathways through its Green List of occupations, I believe.
